MAPLE MUFFINS
Mix together in bowl
½ cup Boddy’s maple syrup
¾ cup bran
½ cup milk
Stir in 1 egg and ¼ cup oil
In another bowl combine:
1 ¼ cups whole wheat flour
½ tsp salt
3 tsp baking powder
1/3 cup of raisins or nuts (chopped)
Stir dry ingredients into milk mixture only till moist
Put into 12 cup muffin tin and bake18 – 20 minutes at 375 F.
Glaze if desired: Melt 1 Tbsp butter with 2 Tbsp Boddy’s maple syrup
Stir in approx. ½ cup icing sugar. Sprinkle top with chopped nuts.
